Set beans and chives in separate shallow bowls.
Combine rice, salad dressing, and cheese in small bowl.
Scoop into third shallow bowl. To serve pre-made, lay lettuce
leaves flat on plate and spoon rice mixture, beans, and
chives on each. Or—set leaves on a plate and allow
guests to create their own lettuce wraps. Reduced-fat wheat
crackers may be substituted for the lettuce. Serves 6.
