Confetti Appetizers

1 cup chopped pimento-stuffed olives
3/4 cup shredded Cheddar cheese
3 green onions with tops, chopped
1/2 tsp. chili powder
1/2 cup mayonnaise
8 English muffins, split
3/4 cup Monterey Jack cheese

Combine first six ingredients. Cover and chill 2-3 hours. Spread each muffin half with 2 Tbsp. of cheese mixture. Place muffins on cookie sheet and hake at 400 degrees F. for 10-15 min. or until bubbly. Cut each muffin half into four wedges. Serve warm. (Also can be served at room temperature or reheated in a microwave.) Yield: 64 appetizers.
