Curried Chili

2 lb. lean ground chuck (lightly salted)
1/2 cup finely diced onion
1 can dark red kidney beans, drained curry powder
1 can light red kidney beans, drained
1 can V-8 tomato juice (not zesty flavored, use more if desired)

 

Brown the ground chuck. Add all ingredients—curry to taste (start with ¼ tsp.), more tomato juice and salt if desired. If you’re not sure if you like curry, combine all ingredients and sample the soup in a separate cup with just a dash of curry before adding it to the entire batch. You can always add a small amount of chili powder instead if you find you do not care for curry.
