Angel Cheesecake
Lucinda Hoffman, Tigerton

Crust:
30 graham crackers
2 Tbsp. sugar
1/3 cup butter, melted
Filling:
1 tsp. grated lemon peel
1 Tbsp. lemon juice
1 tsp. vanilla
1/4 tsp. salt
2 (8 oz.) pkgs. cream cheese
5 egg yolks
2 cups sour cream
5 egg whites
1/2 cup sugar

Mix crust ingredients together and press on bottom of 10-inch springform pan. For filling, beat first 5 ingredients into cheese. Blend in yolks and sour cream. In a separate bowl, beat egg whites to stiff peaks; gradually add 1/2 cup sugar, beating to stiff peaks. Fold whites into cheese mixture gently and pour into pan. Bake at 325 degrees for 1 hour and 15 minutes.
