Angel Food Bars
Carol Sprague, Eau Claire

3 eggs, separated
1 cup sugar
1 cup flour
1-1/2 tsp. baking powder
1/2 cup boiling water
1 Tbsp. vanilla

Beat egg whites until stiff; set aside. In a separate bowl, beat egg yolks well, adding sugar gradually. Add flour and baking powder alternately with boiling water. Add vanilla. Fold in beaten egg whites. Put in ungreased 9-x13-inch pan and bake at 350 degrees for 30 minutes. Invert pan to cool. Frost with powdered sugar frosting and sprinkle with crushed salted peanuts.

Cook’s Note: My grandmother used to cut these into squares, frost all sides with white frosting, then roll in crushed peanuts.
