Borden’s None Such Mincemeat Cookies

3-1/4 cups all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
1 cup vegetable shortening
1-1/2 cups sugar
3 large eggs, beaten
1-1/2 cups mincemeat

Combine flour, salt, and baking soda. In a separate bowl, cream shortening; adding sugar gradually and cream until fluffy. Add eggs to creamed mixture and beat until smooth. Stir in mincemeat. Gradually add flour mixture; be sure to mix well. Drop by the teaspoonful about 2 inches apart on greased baking sheet. Bake in a 400-degree oven for about 12 minutes. Makes 48 cookies.
