Bread Pudding
Marlene Young, Colfax

4 eggs, beaten
2-1/4 cup milk OR 2 cups half & half with 1/4 cup milk
1/2 cup sugar
1 Tbsp. vanilla
1 tsp. shredded orange peel (optional)
1/2 tsp. ground cardamom or ground cinnamon
Dash of nutmeg
4 cups dried bread cubed
1/3 to 1/2 cup sliced or chunked, peeled apple or raisins or dried tart cherries or dried cranberries

In a bowl, beat together eggs, milk, sugar, vanilla, orange peel (if desired), and spices. In an ungreased 2 quart baking dish, toss together bread cubes and fruit. Pour egg mixture over bread/fruit. Bake in a 350-degree oven for 40–55 minutes or until a knife inserted near center comes out clean. Cool slightly. You can use your favorite sauce such as a caramel sauce for topping.
