Caramel Pudding
Lavonne Swiggum, Gays Mills

1/3 cup brown sugar
3 Tbsp. cornstarch
1/4 tsp. salt
2-1/4 cups milk
1 tsp. vanilla
3 Tbsp. butter

Mix sugar, cornstarch, and salt. Gradually blend in milk. Cook over medium heat, stirring constantly, until mixture thickens. Cook 2–3 minutes more. Add vanilla. This will thicken as it cools. Pour into individual dishes and chill until thick.
