Chewy Sour Cream Craisin

Crust: |
1-1/4 cups quick oatmeal
1-1/4 cups flour
1/2 cup brown sugar |
1/2 tsp. baking soda
3/4 cup butter |
Filling: |
4 eggs yolks (keep whites for
topping)
1 cup sugar
2 Tbsp. cornstarch
1-1/2 cups craisins |
1/2 cup raisins
2 cups sour cream
1/2 tsp. vanilla |
Topping: |
4 egg whites
1/2 tsp. cream of tartar
1/8 tsp. salt |
1/2 cup brown sugar
1/3 cup pecans, chopped |
In a medium bowl mix oatmeal, flour, brown
sugar, and baking soda. Cut in butter until crumbly. Press
into bottom of an ungreased 9x13-inch pan. Bake 15 minutes
in preheated 350-degree oven. In a medium saucepan, mix together
egg yolks, sugar, cornstarch, craisins, raisins, sour cream,
and vanilla. Over medium heat, bring to a boil for about 1–2
minutes until thick, stirring constantly. Pour over baked
crust. In a medium bowl, beat egg whites, cream of tartar,
salt, and brown sugar until stiff peaks form. Spread over
filling to edges. Sprinkle pecans on top. Bake 15–20
minutes until golden brown. Cool and refrigerate until serving.
Yields 20 bars.
