Date or Raisin Cake

Cake:
1 cup sugar
1 cup butter
2 eggs
1 cup sour milk**
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
2 cups flour
1 tsp. salt
1 cup nut meats, chopped
1 cup dates or raisins, chopped
Between the Layers:
1 large Tbsp. flour
Water
1/2 cup dates, chopped
1/2 cup nut meats, chopped
1/4 cup butter
1 tsp. vanilla
Bananas, split lengthwise
Frosting:
1/2 cup brown sugar
1/2 cup white sugar
Water to moisten
2 beaten egg whites |
Mix all cake ingredients and put in 2 greased layer cake pans and bake at 350 degrees until toothpick inserted comes out clean (about 25 minutes or so). For filling between the layers, mix flour and water to make a paste. Cook this mixture until thick and then add dates, nut meats, butter, and vanilla. Put this mixture on the bottom layer of the cake. Layer the split bananas over this mixture and put the top layer of cake on bananas. For frosting, cook sugars with water until it spins a thread. Add this mixture to beaten egg whites. Stir until thick and partly cool.
**To make sour milk, add 1 Tbsp. cider vinegar to 1 cup milk. Let stand a minute or so.
