Green Tomato Mincemeat
Ruth Jokinen, Brantwood

1 peck green tomatoes (coarsely ground)
1/2 peck sour apples (coarsely ground)
5 lbs. brown sugar
1 lb. raisins (ground)
1 lb. currants (ground)
1/2 lb. citron, finely chopped
2 lemons, juice and rinds
1 Tbsp. cinnamon
1-1/2 tsp. cloves
1-1/2 tsp. nutmeg
1 Tbsp. salt

Add water to cover green tomatoes. Bring to a boil; drain. Repeat 3 times; drain. Add remaining ingredients; mix well. Simmer, stirring frequently for 1 hour. Note: I freeze in amounts for one pie so I only have to thaw enough for one pie at a time. Keeps well. You can also can this.
