  Hummingbird Muffins
Barbara Semrau, Tomah

1-1/4 cups oil
3 eggs
3 cups flour
1-1/2 cups white sugar
1 tsp. baking soda
1 tsp. cinnamon
8 oz. can crushed pineapple (with juice)
1 cup mashed bananas (2 large)
1 tsp. vanilla
1 cup walnuts, chopped

Use less oil if preferred. Blend oil and eggs. Then mix well with dry ingredients. Add fruit, nuts, and flavoring and blend well. Makes 3 dozen regular-sized muffins. Bake in 350 degree oven until done; about 20 minutes. Let stand 24 hours to mellow flavor.
