Blend first 9 ingredients; then add flour and blend well. Chill dough. Roll out to about 1/4-inch thickness. Cut with Spam can or round cookie cutter. Bake on ungreased cookie sheet for 6–8 minutes at 375 degrees. For icing, dissolve gelatin in warm water; add sugar. Bring to a rolling boil; turn down heat and simmer for about 10 minutes. Put powdered sugar in a large mixing bowl. Pour syrup over powdered sugar and beat with an electric beater for about 10 minutes. Add a little salt and almond extract. Spread on cookies. It takes a while for the frosting to dry.
