Mincemeat Cookies

1/2 cup butter, softened
1 cup sugar, divided
1 egg
1 tsp. vanilla
1-3/4 cup flour
1/2 tsp. salt
1-1/2 tsp. baking powder
9 oz. condensed mincemeat, cut in small pieces
1 egg white |
Cream together butter and 3/4 cup sugar. Beat in egg and vanilla. In a separate bowl, combine flour, salt, and baking powder; gradually add flour mixture to the creamed mixture. Mix well; stir in the mincemeat. Refrigerate for 2 hours. Roll dough into 1-inch balls. Dip the rolled dough in lightly beaten egg white, then dip into remaining sugar. Place dough balls sugar side up on a greased pan. Bake at 375 degrees for 10 minutes or until set.
