No Weep Meringue

1/4 cup sugar
1 Tbsp. cornstarch
1/2 cup water
1 tsp. vanilla
Pinch of salt
3 egg whites (room temperature)
Combine sugar, cornstarch, and water in a
small saucepan. Cook and stir over medium heat until thickened
and looks clear. Set aside to cool completely. In a large
mixing bowl, beat egg whites and salt until stiff. Add cooked
mixture slowly to egg whites and continue beating until smooth.
Beat in vanilla. Pile lightly on top of pie and bake at 325
degrees until lightly browned.
