Oatmeal Cake

1-1/2 cup boiling water
1 cup Quick Oats
1/2 cup butter, softened
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1-1/2 cup sifted flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. Salt
Broiled Topping:
1/4 cup brown sugar
1/2 cup granulated sugar
1 cup flaked coconut
1 cup chopped nuts
6 Tbsp. butter
1/2 cup light cream
1/4 tsp. vanilla |
Mix boiling water and oats and let stand. Cream butter and sugar thoroughly. Beat in eggs. Stir in soaked oatmeal. Sift flour and remaining ingredients. Stir in oatmeal mix. Bake in a 9-x13-inch pan at 350 degrees for 30–35 minutes. Let cool. Combine all topping ingredients except vanilla in a pot. Heat until bubbly. Stir in vanilla. Spread on cake and broil about 5 minutes.
