Oatmeal Peanut Fudge Squares
Marianne Severson, West Allis

1 cup (2 sticks) butter
1/2 cup brown sugar
1 tsp. vanilla
3 cups quick-cooking oats
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Grease a 9-inch square pan. In a large saucepan, melt butter. Stir in brown sugar and vanilla. Mix in oats, cooking 2 to 3 minutes on stove. Press into pan. Melt chips and peanut butter in saucepan. Pour over oat mixture. Refrigerate 2 to 3 hours.
