Pear Brunch Cake

Streusel:
3/4 cup flour
1/2 cup light brown sugar
2 tsp. cinnamon
1/2 tsp. salt
4 Tbsp. (1/2 stick) cold butter, diced
1/2 cup almonds, sliced

Cake:
2 cups flour
1/2 cup sugar
3 tsp. baking powder
1/4 tsp. salt
1-1/4 cups whole milk
1 tsp. almond extract
1 large egg
2 ripe pears, cored and diced

Preheat oven to 350°F. Butter two 8-inch round baking pans and set aside. To make streusel, combine flour, brown sugar, cinnamon, and salt in medium bowl. Cut in butter using a pastry cutter or fork until mixture forms small to medium pieces. Mix in sliced almonds. Cover and refrigerate until ready to use. To make cake batter, mix together flour, sugar, baking powder, and salt in medium bowl. Add milk, almond extract, and egg, stirring until just combined. Pour batter into prepared baking pans. Sprinkle half the pears over top of each cake, pressing into cake slightly. Top each cake with half the streusel mixture. Bake 30 minutes or until toothpick inserted into center of cake comes out clean. Makes two 8-inch cakes.
