Plum Good Pecan Bars
Crust
2 cups all-purpose flour
3 Tbsp. packed light brown sugar
1-1/2 tsp. finely grated orange zest
1/2 cup (1 stick) butter or margarine, cut into small
pieces
Topping
2 cups chopped dried plums
1 cup chopped pecans
3 eggs
3/4 cup light corn syrup
1/2 cup packed light brown sugar
2 Tbsp. butter or margarine, melted
1-1/2 tsp. vanilla extract |
Preheat oven to 350°F. For crust, in
medium bowl, mix flour, brown sugar, and orange zest. Cut
in margarine with pastry blender or two knives until mixture
resembles coarse crumbs. Mixture will be dry. Press mixture
in bottom of greased 13 x 9-inch baking pan. Bake in lower
third of oven for 10 to 12 minutes. For topping, sprinkle
dried plums and pecans evenly over crust. Whisk together eggs,
corn syrup, brown sugar, melted butter or margarine, and vanilla.
Pour over crust. Bake for 20 to 25 minutes until filling is
firm around edges and slightly soft at center. Cool on wire
rack. Cut into 32 bars.
