Pumpkin Muffins
Elsie Petroski, Glidden

1 cup pumpkin
2 tsp. pumpkin pie spice
1/2 cup grated carrots
4 Tbsp. raisins
1 tsp. vanilla
2/3 cup instant non-fat dry milk
8 pkgs. artificial sweetener
2 eggs
1 tsp. cinnamon
6 Tbsp. flour
1 tsp. baking soda

Combine dry ingredients. In a separate bowl, combine beaten eggs and vanilla. Add pumpkin to egg mixture and mix well. Add dry ingredients, carrots, and raisins. Spray muffin tins with nonstick cooking spray. Divide dough into 12 tins. Bake at 350 degrees for 15 minutes.
