Royal Icing

3 Tbsp. powdered egg whites or meringue powder
6 Tbsp. water
4 cups sifted powdered sugar

Beat all ingredients in large bowl with electric mixer until stiff peaks form. For stand mixer, beat on low speed 7 to 10 minutes. For hand mixer, beat on high speed 10 to 12 minutes. For stiffer icing, use 1 Tbsp. less water. Makes about 3 cups icing. Use for frosting (tint using food coloring) or for “glue” to hold together cookie pieces and affixing candy when constructing gingerbread houses.
