White Fruitcake
Lois Stone, Wisconsin Dells

5 eggs
1-1/2 cups sugar
2 Tbsp. brandy
1-1/2 cups flour
1/2 tsp. salt
1 tsp. baking powder
2 lbs. whole pitted dates
1 lb. whole Brazil nuts
1 lb. whole walnuts
1/2 lb. whole candied cherries
1/2 lb. candied pineapple

Beat eggs and sugar; add brandy. Mix fruit and nuts with flour, salt, and baking powder; add to egg mixture. Pour into 2 bread pans. Bake at 275 degrees for 1 to 1-1/2 hours, then at 300 degrees for another 30 minutes.
