  HomemadeVenison Sausage
Eugenia Billings, Cadott

5 lbs. pork butt
3 lbs. venison
5 yards of casings
1 Tbsp. black pepper
6 cloves garlic
2-1/2 Tbsp. salt
2 cups cold water

Grind meat in very coarse grinder and mix well with other ingredients. Wash casings and stuff with meat mixture. Place in refrigerator until ready to cook or you can freeze it. Remember to tie the ends together with some string before cooking. This recipe can use pork alone, venison, bear, or veal..
