Baked Peach French Toast

3 oz. package cream cheese, softened
10–14 (1-inch thick) slices French bread
29 oz. can peach slices, drained*
1/4 cup nuts, chopped
3 eggs
1 cup milk
1/3 cup maple-flavored syrup
2 Tbsp. butter or margarine, melted
1 Tbsp. sugar
1 tsp. ground cinnamon
1 tsp. vanilla |
Preheat oven to 400 degrees. Spread cream cheese over both sides of bread slices and place in 9-x13-inch baking dish. Prick bread slices several times. Top with peach slices and sprinkle nuts over peaches. In large bowl, whisk eggs, milk, syrup, butter/margarine, sugar, cinnamon, and vanilla. Pour mixture over bread and bake for 20–35 minutes or until set in center. *Variations: a large apple—peeled, cored, and sliced—can be substituted for the peaches. Yields 6 servings.
