2–3 lbs. pork ribs (country-style or baby-back)
1 Tbsp. celery seed
1 Tbsp. chili powder
1/4 cup brown sugar
1 Tbsp. salt
1 tsp. paprika
8 oz. can tomato sauce
1/4 cup cider vinegar |
Mix the spices together well. Reserve 2/3 for a rub; take the other 1/3 of spice mixture and add to tomato sauce and cider vinegar to make a sauce. Set both of those aside. Precook ribs by placing them in a large heavy pan and cover with water. Bring to boil; then reduce heat to simmer until ribs are tender, about 30–40 minutes. Remove ribs from water and place on baking sheet to drain. When well-drained, rub with 2/3 portion of the dry spices, and then brush sauce over each surface of ribs. Grill over medium–hot grill or place on baking sheet and heat in oven preheated to 375 degrees. Turn and baste with sauce every 10 minutes until sauce is gone and ribs are thoroughly heated through. Total grilling or oven time will be about 30 minutes.
