Broiled Young Squab

4 young squab
1/4 lb. butter
2 Tbsp. wine vinegar or red wine
pinch of thyme
salt and pepper

 

Mix butter and seasonings. Keep warm so butter does not solidify. Split bird in half lengthwise and place on foil-covered broiler pan. Brush basting mixture over halves thoroughly. Place under broiler 8-10 minutes. When lightly brown, turn and baste; then broil 8 minutes more. Bird should be just right by then; if not, cook a little longer, but do not overcook.
