3 Tbsp. olive oil
2 lbs. ground turkey
2 onions chopped
2 zucchinis diced
3 cloves garlic, finely chopped
2 Tbsp. chili powder
2 Tbsp. ground cumin
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. freshly ground pepper
3 cans (28 oz. each) diced unsalted tomatoes with liquid
3 cans (15 oz. each) black beans, rinsed and drained
2 oz. bittersweet chocolate
For garnish:
1 cup sour cream
1 cup cheddar cheese, grated
Diced jalapenos or hot sauce

In a large pot over medium high heat, heat the oil. Add the turkey and cook until browned. Transfer to a bowl and set aside. Add the onions and zucchini and cook over medium heat, stirring occasionally about 6–8 minutes. Add the garlic, chili powder, cumin, oregano, salt, and black pepper and cook for 1 minute stirring constantly. Add the turkey, tomatoes with the liquid, beans, and chocolate. Simmer the chili over low heat for 20 minutes, stirring occasionally. Top each bowl with a dollop of sour cream, sprinkle of cheese, and scallions. Serves 10–12.
