Company’s Coming Pork Roast

2–3 pound boneless pork roast
Glaze:
1/2 cup honey mustard
3 Tbsp. horseradish
2 Tbsp. brown sugar
Garnish:
2 cans (16 oz. each) peach halves, drained
2 Tbsp. brown sugar
1 tsp. cinnamon
2 Tbsp. butter

Heat oven to 350 degrees. Place roast in shallow roasting pan and roast for 45–60 minutes. Meanwhile, in small bowl mix together Glaze ingredients. Spread Glaze over roast the last 20 minutes and continue roasting until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. While pork is resting, place peach halves in shallow baking dish, cut side up. Sprinkle peaches with combined 2 Tbsp. brown sugar and cinnamon; dot with butter. Place peaches in oven for 15 minutes to heat through. Slice roast and serve surrounded by peaches. Serves 8–12.
