Hunter's Casserole (Bayerischer Jagertopf)


1 -1/2 Ibs. beef for stew
1/2 cup dry red wine
3 carrots, sliced
2 large onions, chopped
3 medium potatoes, sliced


1 (6-oz.) can sliced mushrooms
1/2 tsp. salt

1 cup beef bouillon
1 /8 tsp. black pepper



Sprinkle meat with salt and pepper. Heat oil in heavy saucepan. Brown meat well in hot oil. Add onions and drained mushrooms; cook until onions are transparent. Add wine; cover; simmer 30 minutes. Add bouillon; continue to simmer 30 minutes. Add carrots and potatoes; stir well. Cook, covered, 20-25 minutes or until vegetables are tender. Serves 4.
