Marinated Beef and Veggie
Kabobs
2 pounds beef tenderloin,
cubed
1/2 cup chicken broth
3 cloves garlic, crushed
1/2 tsp. salt and pepper
12 large chunks zucchini |
1 Tbsp. olive oil
2 Tbsp. lemon juice
1 Tbsp. chopped oregano
12 large mushrooms
12 pieces red and green pepper |
Mix marinade and refrigerate for 1 hour.
Alternate tenderloin and vegetables on skewers. Cook or
BBQ basting frequently until lightly pink inside. Do not
overcook.
