1 pkg. (about 1-1/4 lbs.) fresh ground chicken No-stick cooking spray 1/4 cup frozen chopped onions 2/3 cup Italian-style bread crumbs 2 eggs 1/2 tsp. minced garlic 1/2 cup Cheddar cheese, grated, fancy style
Preheat oven to 350 degrees. Spray a 12-cup muffin pan with no-stick cooking spray. In large bowl, mix together all remaining ingredients. Fill muffin cups with a scant 1/2 cup of meatloaf mixture. Bake 25 to 30 minutes.
