Boil pork shoulder, preferably with a skin, or pork hocks
for approximately 1 hour. Grind meat and mix with oatmeal
cooked in meat juice (to a heavy consistency). Ratio should
be approximately 2/3 oatmeal to 1/3 meat. I use almost half
meat (3 lbs.) and a small box of oatmeal; instant oatmeal
can be used. Mix in:
1-1/2 Tbsp. cinnamon
1-1/2 Tbsp. nutmeg
1-1/2 Tbsp. coarse allspice
Salt to taste
Bake in bread loaf pan for 1 hour at 350 degrees.
