1 pound pork tenderloin,
cubed
1/4 cup salad oil
1/3 cup finely chopped white onion
1/4 tsp. black pepper |
1/4 cup lime juice
1 tsp. powdered coriander
1 clove crushed garlic
Assorted chopped vegetables (alternate on skewers) |
Combine all ingredients (add cubed tenderloin
last) into a glass or pottery bowl. Cover & refrigerate
overnight, stirring once or twice. To cook, alternate
meat with vegetables (zucchini, onion, peppers, mushrooms)
on skewers, reserving the marinade. Grill over medium
heat, basting occasionally with the marinade. Do not overcook
meat. Yields 4 servings.
