Liver Sausage or Loaf
Phyllis Kimpel, Wautoma

5 lbs. pork liver
3-1/2 lbs. pork (must have some fat on it)
3 tsp. salt
1 tsp. pepper
2-1/2 tsp. cinnamon

Boil whole pork liver about 1 to 1-1/2 hours. Boil chunk of pork about 2 to 2-1/2 hours. Cook separately. When cool, put through food processor, alternating as you grind. Add salt, pepper, and cinnamon. Taste and add more salt and cinnamon if necessary. Mix thoroughly with your hands. Pack in baking dishes and bake about 1 hour. If mixture seems dry, add liquid the pork was cooked in.
