Sunburst Casserole

2 Tbsp. shortening
1/3 cup chopped onions
2 cloves garlic
1 cup water
1-1/2 cups celery diced
3 or 4 cans sliced mushrooms

2 8-ounce cans tomato sauce
2 bay leaves
2 tsp. salt
1/2 lb. grated cheese
4 hard-cooked eggs

Heat fat; add onions and garlic in 2-1/3-qt. sauce pan; cook until yellow. Add water and celery. Cover and simmer 10 min. Add mushrooms and tomato sauce. Cook 5 min. longer. Meanwhile, cook noodles with bay leaf and salt 8 min. Drain; rinse in cold water. Remove bay leaf. Grease 2-qt. casserole. Put in layer o f noodles–tomato sauce–cheese; repeat until all mixture is used. Let stand 1 hour or longer to blend flavors. Bake at 350 degrees F. for 30 min. Add cut boiled eggs on top last 10 min. Serves 8.
