Thai Turkey Roll-Up
4 (8-in.) whole wheat tortillas
1 lb. oven-roasted turkey breast, sliced thin
2 oz. red onion, sliced thin
2 oz. lettuce, washed, drained, shredded
4 tsp. cilantro, washed, drained
Peanut Sauce:
1 large lime, zested and juiced
2 Tbsp. reduced-sodium soy sauce
2 Tbsp. green onion, minced
1 Tbsp. cilantro, minced
2 Tbsp. crunchy peanut butter
2 tsp. light brown sugar
1 tsp. fresh ginger root, peeled and minced
1 tsp. fresh garlic, minced
1/4 tsp. red pepper flakes

In a medium bowl, combine lime juice and zest, soy sauce, onions, cilantro, peanut butter, sugar, ginger root, garlic, and pepper flakes. Stir well. Spread each tortilla with Peanut Sauce. Layer each with 4 oz. of sliced turkey. Evenly sprinkle each with 1 Tbsp. onion, 1 Tbsp. lettuce, and 1 tsp. cilantro. Roll up tightly and cut on the diagonal. Serve chilled.
