Vegetable Lasagna
9 lasagne noodles
1 head cauliflower, cut in small pieces
1 bunch broccoli, cut in small pieces
1 egg I (16-oz.) carton small-curd cottage cheese
1 Ib. shredded Mozzarella cheese |
2 (8-oz.) cans tomato sauce
Garlic powder, onion salt, oregano,
and pepper to taste
1 Tbsp. butter

Boil noodles until tender; drain and rinse. In small
saucepan, combine tomato sauce, spices to taste, and
butter. Heat until hot and butter cheese and egg together.
In a 13x9in. pan, place 3 noodles. Sprinkle a third
of the broccoli and cauliflower over noodles, then pour
a third of sauce over vegetables. Add a third of the
cottage-cheese mixture, then a third of the Mozzarella.
Repeat layers two more times. Cover and bake at 350
degrees for 30 min. or until vegetables are tender.
Uncover and bake for 15 min. more. Remove from oven
and let set for 10-15 min.
