Alfredo Sauce  1
LaVaun Foley, Fennimore

8 oz. cream cheese
3/4 cup Parmesan cheese (dry)
1/2 cup butter or margarine
1/2 cup milk

Mix all ingredients and cook over low heat until smooth.

1 cup heavy cream
4 tsp. unsalted butter
1/2 cup chicken broth
1 cup Parmesan cheese, grated
1 egg, separated
Dash of salt

Dash of pepper

In a 4-quart saucepan, combine melted butter, heavy cream, and broth. Bring mixture to a simmer, slowly adding Parmesan cheese and stir constantly. Once sauce has begun to thicken, whisk in egg yoke. Sauce should be smooth and lump-free. Salt and pepper to taste. If sauce is too thick, whisk in broth a little at a time as needed.
