Asparagus Squares
February 1949
Now that asparagus is beginning to raise
its regal head in store windows, plan a Lenten dish featuring
this spring favorite. Cut buttered, cooked asparagus in
5-in. lengths. Cut rolled-out biscuit dough in 4-in. squares,
place asparagus on squares, and wrap biscuit dough around
the asparagus. Bake these bundles like plain biscuits
and serve them hot with golden cheese sauce poured over
them. If asparagus is not available, use green beans or
whole cooked carrots instead. White sauce sprinkled with
chopped parsley is as good as cheese sauce for the carrot
bundles.
