California Rice
Gladys Heitkemper, Catawba

6 cups hot cooked rice
1 cup celery, diced
2 bell peppers, diced
2 medium onions, diced
1-1/2 cups Wisconsin Cheddar cheese, cubed
1-1/2 cups fully cooked ham, cubed
1 stick butter
Salt & pepper, to taste

 Sauté celery in butter; add onions, green and red bell peppers. Sauté a few minutes; add salt, pepper, ham cubes, and saute a little longer to warm ham. Put hot cooked rice in large bowl, add sauteed vegetables and ham, and  add cubed cheese. Mix well. Let stand to season through. Serve hot. Note: I like to add a little sweet red bell pepper, diced to make it pretty.
