Caramelized Creamed Corn

8 slices (8 oz.) bacon
1 Tbsp. butter
1/2 cup onions, thinly sliced
4 cups corn, fresh or frozen
1 cup sour cream
1/4 tsp. cayenne or red pepper
1 Tbsp. fresh basil, chopped

In large, nonstick skillet over medium heat, fry bacon until crisp. Remove to a cutting board; coarsely chop and set aside. Melt butter in large skillet; add bacon. Add onions and cook over medium-low heat, stirring occasionally until onions begin to brown and caramelize, about 10 minutes. Add corn, sour cream, pepper, and basil; mix well. Cook over medium heat until bubbling. Serve immediately. Makes 4 to 6 servings.
