Simmer cranberries in a bit of water until they pop open. Gently mash with fork and allow to cool. Grate one apple (sweeter with 2) into cranberries. Add juice of orange and 1 cup red cabbage sauerkraut. Add maple syrup to desired sweet/sour taste and serve. This beautiful magenta color lifts the heart of any meal!
Note: Also nice with lentils and rice, chicken, wild game, or brie cheese and Melba toast.
