Baby Artichokes
24 baby artichokes (about
3 lbs.)
2 cups water
2 Tbsp. cider or balsamic vinegar or lemon juice
1/4 cup flavored olive oil (roasted garlic or basil)
Kosher salt
Cracked pepper |
Rinse artichokes under cold
running water. In large saucepan, bring the 2 cups water
and vinegar to boiling. Add artichokes and simmer until
just beginning to get tender, about 3 minutes for smaller
babies, 5 minutes for larger babies. Drain well and let
cool briefly, for easier handling. Cut off ends of stems.
Peel back and snap off petals until you come to a center
cone of paler green petals. Cut off top third of each
artichoke. Cut artichokes in half lengthwise. Toss artichokes
with flavored olive oil and sprinkle with salt and pepper.
Arrange on grill over medium high heat and cook until
beginning to brown, about 3 to 5 minutes. Turn and cook
another 3 to 5 minutes. Makes 4 servings.
