Harvest Stuffing for Your Savory Turkey

1 cup shredded carrots
1 cup chopped celery
1/2 cup chopped onion
1/2 cup butter
1 tsp. ground sage or poultry seasoning
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. cinnamon
8 cups dry bread cubes
2 cups finely chopped peeled apples
1/2 cup chopped pecans
1/4 cup wheat germ (optional)
1/2 to 3/4 cup chicken broth
3/4 cup raisins

Cook carrots, celery, onion in butter until tender, but not brown. Stir in sage or poultry seasoning, salt, cinnamon, pepper. In a bowl combine bread cubes, chopped apples, raisins, pecans, and wheat germ. Add cooked vegetable mixture. Pour chicken broth to moisten. Use to stuff 10 pound turkey. Serves 10.
