Mashed Potato Dumplings
Jane Smugala, Catawba

1 large egg
1-1/2 cups mashed potatoes
3/4 tsp. salt
1 tsp. baking powder
1-1/2 cup flour (don’t skimp)

Slightly beat egg. Mix in remaining ingredients. Best method: Dip tablespoon into boiling water or soup, scoop dough, and drop spoonful into pot. Repeat. Cover and boil for 5–8 minutes.
