Onion Mango Chutney
1 cup chopped onion
1 cup cubed mango or papaya
1/3 cup dark and seedless raisins
2 Tbsp. candied ginger, minced
2 tsp. lime rind, grated
3 Tbsp. lime juice
1 cup sugar
1/2 cup brown sugar
6 tTbsp. cider vinegar
3/4 tsp. mustard seed
3/4 tsp. cumin seed
3/4 tsp. fennel seed
1 tsp. garlic, minced
1/4 tsp. salt |
Combine all ingredients in 10-inch skillet, bring to boil, then simmer uncovered until thickened, about 30 minutes, stirring occasionally. Serve as an accompaniment to meats, fish, curried dishes, and open-face sandwiches. Makes 6 servings or 2 cups.
