 REA Beans
Cathy Moussette, Cornell

1 lb. bacon, cut up
1 onion, chopped
1/2 cup catsup
1/2 cup brown sugar
1/2 cup white sugar
1 tsp. salt
1 tsp. dry mustard
2 tsp. vinegar
1 can butter beans
1 can lima beans
2 cans pork & beans
1 can kidney beans

Fry bacon; drain all but 1 Tbsp. of the grease. In grease, fry onion until clear. In a separate bowl, mix catsup, sugars, salt, dry mustard, and vinegar. Drain beans. Mix everything together; bake at 325 degrees for 1 hour. (From our out-of-print What’s Cooking cookbook, this recipe was a longtime hit at Chippewa Valley Electric Co-op open houses.)
