Sweet & Sour
Red Cabbage

1 small
head red cabbage, shredded
2 tart apples, chopped
2 Tbsp. bacon drippings
1 onion, diced
1/4 cup vinegar

1/2 tsp. salt
pinch of pepper
1 Tbsp. flour
1/4 cup brown sugar

Heat bacon drippings in
skillet; add onion and sauté until tender. Add
cabbage, apples, vinegar, salt, and pepper. Cover and
cook to tender, about 5 minutes. Mix flour with brown
sugar; stir into cabbage and cook until sauce is slightly
thickened and translucent. Serves 4.
