Scalloped Sweet Potatoes with Orange

4 sweet potatoes
1/4 cup dark corn syrup
2 Tbsp. butter
1/4 tsp. salt
Parboil unpeeled sweet potatoes until half-cooked. Peel; cut in slices. Cut orange (peeled or unpeeled) into thin slices, removing seeds. In buttered baking dish, alternate layers of sweet potato and orange slices, topping each layer with a little syrup, butter, and salt. Bake in moderated (350 degrees F.) oven about 45 min., basting occasionally with syrup in baking dish. Makes 4 servings.
