Southern Sweet Potato Pie
Marianne Severson, West Allis

3 Tbsp. all-purpose flour
1-2/3 cups sugar
1 cup mashed sweet potatoes
2 eggs
1/4 cup light corn syrup
1/4 tsp. ground nutmeg
Pinch of salt
1/2 cup butter or margarine
3/4 cup evaporated milk
1 unbaked 9-inch pastry shell

In a large mixing bowl, combine the flour and sugar. Add sweet potatoes, eggs, corn syrup, nutmeg, salt, butter/margarine, and evaporated milk; beat well. Pour into the unbaked pastry shell. Bake at 350 degrees for 55–60 minutes. Yield: 8 servings.
